- Slice mushrooms and dice the onion into small, even pieces.
- Measure out the broth, coconut milk, mustard, and seasonings.
- Heat a large skillet over medium heat and brown the ground beef until cooked through.
- Add the onion and mushrooms and cook until soft and golden.
- Stir in garlic and cook until fragrant.
- Pour in beef broth and simmer gently to reduce slightly.
- Add coconut milk and Dijon mustard, stir until smooth.
- Simmer until the sauce thickens. Season with salt and pepper to taste.
- Serve hot over roasted vegetables, mashed cauliflower, or cauliflower rice.
Notes
For a shortcut, use pre-sliced mushrooms or frozen cauliflower rice. For variety, add spinach at the end or try ground turkey for a lighter version.
