  • 1 lb ground beef
  • 8 oz mushrooms sliced
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 1 cup beef broth
  • 1 cup coconut milk or cashew cream
  • 1 tbsp Dijon mustard
  • to taste salt
  • to taste black pepper freshly ground

Method
 

  1. Slice mushrooms and dice the onion into small, even pieces.
  2. Measure out the broth, coconut milk, mustard, and seasonings.
  3. Heat a large skillet over medium heat and brown the ground beef until cooked through.
  4. Add the onion and mushrooms and cook until soft and golden.
  5. Stir in garlic and cook until fragrant.
  6. Pour in beef broth and simmer gently to reduce slightly.
  7. Add coconut milk and Dijon mustard, stir until smooth.
  8. Simmer until the sauce thickens. Season with salt and pepper to taste.
  9. Serve hot over roasted vegetables, mashed cauliflower, or cauliflower rice.

Notes

For a shortcut, use pre-sliced mushrooms or frozen cauliflower rice. For variety, add spinach at the end or try ground turkey for a lighter version.
