Tuscan Stewed Beans
  • 2 cans cannellini beans drained and rinsed
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 small onion finely chopped
  • 1 cup crushed tomatoes
  • 1 cup vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • salt to taste
  • black pepper to taste
  • 1 handful fresh spinach
  • fresh parsley for garnish
  • red pepper flakes optional

Method
 

  1. Heat the olive oil in a large pan over medium heat. Add the chopped onion and cook until soft and translucent.
  2. Add the minced garlic and cook for about 30 seconds until fragrant, being careful not to brown it.
  3. Stir in the crushed tomatoes, oregano, thyme, salt, and pepper. Let the mixture simmer for 5 minutes.
  4. Add the cannellini beans and vegetable broth. Stir gently and bring to a soft simmer.
  5. Lower the heat and cook uncovered for 15 to 20 minutes until the sauce thickens and the beans become creamy.
  6. Add the fresh spinach and stir until wilted. Taste and adjust seasoning as needed. Garnish with parsley and red pepper flakes before serving.

Notes

For a thicker texture, mash a few beans with the back of a spoon while simmering. A squeeze of fresh lemon juice at the end adds brightness. This recipe works well with butter beans or other white beans too.
