- Heat the olive oil in a large pan over medium heat. Add the chopped onion and cook until soft and translucent.
- Add the minced garlic and cook for about 30 seconds until fragrant, being careful not to brown it.
- Stir in the crushed tomatoes, oregano, thyme, salt, and pepper. Let the mixture simmer for 5 minutes.
- Add the cannellini beans and vegetable broth. Stir gently and bring to a soft simmer.
- Lower the heat and cook uncovered for 15 to 20 minutes until the sauce thickens and the beans become creamy.
- Add the fresh spinach and stir until wilted. Taste and adjust seasoning as needed. Garnish with parsley and red pepper flakes before serving.
Notes
For a thicker texture, mash a few beans with the back of a spoon while simmering. A squeeze of fresh lemon juice at the end adds brightness. This recipe works well with butter beans or other white beans too.
