Ingredients
  

Turkey Meatballs
  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic minced
  • 1/4 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Sauce and Assembly
  • 2 cups marinara sauce
  • 4 hero rolls or sub rolls
  • 3 tbsp butter softened
  • 2 cloves garlic finely minced
  • 1 cup shredded mozzarella cheese
  • 2 tbsp chopped parsley

Method
 

  1. Preheat the oven to 400 F. Line a baking sheet with parchment paper.
  2. In a bowl, mix ground turkey, breadcrumbs, egg, minced garlic, parmesan, Italian seasoning, salt, and pepper until just combined.
  3. Form the mixture into small meatballs about 1 to 1.5 inches wide. Place them evenly on the prepared baking sheet.
  4. Bake the meatballs for 15 to 18 minutes until cooked through and lightly golden.
  5. Warm the marinara sauce in a skillet. Add the cooked turkey meatballs and gently coat them in the sauce.
  6. Mix softened butter with the finely minced garlic. Spread the garlic butter inside each hero roll.
  7. Toast the bread in the oven for about 5 minutes until the edges are lightly crisp.
  8. Fill each toasted roll with several turkey meatballs and spoon extra marinara over the top.
  9. Sprinkle shredded mozzarella over the meatballs and return the sandwiches to the oven for 3 to 4 minutes until the cheese melts.
  10. Top with chopped parsley and serve warm.

Notes

Use fresh garlic for the best flavor, keep the meatballs small so they cook evenly, and lightly toast the bread before filling to help keep it crisp. Cooked meatballs can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
