Ingredients
  

Beef Layer
  • 1 lb ground beef
  • 1 onion chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
Corn Layer
  • 2 cups corn kernels fresh or frozen
Mashed Potato Topping
  • 3 cups mashed potatoes
  • 2 tbsp butter
  • 1/4 cup milk

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish to prevent sticking.
  2. Heat a large skillet over medium heat. Add the ground beef and chopped onion and cook for 6 to 8 minutes until the beef is browned and the onion becomes soft.
  3. Season the beef mixture with salt and black pepper and stir well to distribute the seasoning.
  4. Spread the cooked ground beef mixture evenly across the bottom of the prepared baking dish.
  5. Add the corn kernels over the beef layer and spread them evenly to cover the surface.
  6. In a bowl, mix the mashed potatoes with butter and milk until smooth and creamy.
  7. Spoon the mashed potatoes over the corn layer and gently spread them from edge to edge using the back of a spoon.
  8. Bake for 25 to 30 minutes until the top is lightly golden and the dish is heated through.
  9. Allow the dish to rest for about 5 minutes before serving so the layers set nicely.

Notes

You can add garlic while cooking the beef for extra flavor, or sprinkle shredded cheese on top of the potatoes before baking for a richer version. Frozen corn works perfectly and helps keep preparation quick and simple.
