Ingredients
  

Casserole Base
  • 1 pound ground beef
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cooked rice
  • 1 cup salsa
  • 1 cup crushed tortilla chips
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 cup sour cream
  • salt to taste

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a medium baking dish.
  2. Heat a skillet over medium heat. Cook the ground beef until browned, breaking it apart as it cooks.
  3. Add chopped onion and minced garlic. Cook for 2–3 minutes until softened and fragrant.
  4. Sprinkle in taco seasoning and stir to combine. Cook for 1 minute more.
  5. Remove from heat. Stir in black beans, corn, cooked rice, and salsa.
  6. Gently fold in sour cream until creamy and well mixed.
  7. Spoon the mixture into the prepared baking dish and spread it evenly.
  8. Top with crushed tortilla chips, then sprinkle cheese evenly on top.
  9. Bake uncovered for 25–30 minutes until bubbly and golden.
  10. Let rest for 5 minutes before serving. Add optional toppings as desired.

Notes

Drain beans and corn well to avoid excess moisture. Use cooked rice, not raw. For extra flavor, try adding green chiles, bell peppers, or cream cheese. This casserole is freezer-friendly and can be made a day in advance.
