Ingredients
  

Casserole Base
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can beans drained
  • 1 cup corn
  • 1 cup salsa
Layers & Toppings
  • 2 cups crushed tortilla chips
  • 2 cups shredded cheese
  • lettuce for topping
  • tomatoes for topping

Method
 

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add taco seasoning, beans, corn, and salsa. Stir well and simmer for about 5 minutes.
  4. Spread half of the crushed tortilla chips evenly in the baking dish.
  5. Pour the beef mixture over the chips and spread evenly.
  6. Top with shredded cheese, covering the entire surface.
  7. Bake for 15 to 20 minutes until the cheese is melted and bubbly.
  8. Remove from the oven and let rest for a few minutes before serving.
  9. Top with fresh lettuce and tomatoes just before serving.

Notes

Customize this casserole with your favorite toppings like sour cream, avocado, or jalapenos. For a lighter version, use ground turkey or low-fat cheese. Add chips just before baking to keep them crispy.
