Add the ground sausage to the bowl. Mix with your hands until the stuffing blends evenly into the sausage.
Add the cheddar cheese, egg, parsley, salt, and pepper. Mix until everything is combined but not overworked.
Shape the mixture into small balls about the size of a tablespoon scoop. Place them on the baking sheet.
Bake for 18 to 22 minutes, or until the sausage balls are golden and cooked through.
Let them cool for a few minutes before serving so they can firm up.
