Method
- Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente.
- In a bowl, mix the Greek yogurt, chopped dill, lemon zest, and a small pinch of salt until smooth. Set aside.
- Heat olive oil in a large skillet over medium heat. Add the ground lamb and cook while breaking it apart with a spoon until browned and slightly crispy.
- Stir in the minced garlic, cumin, and paprika. Cook for 1 to 2 minutes until the spices become fragrant.
- Add a few spoonfuls of pasta cooking water to the skillet and stir to create a light sauce around the lamb.
- Drain the pasta and add it directly to the skillet. Toss gently to coat the pasta with the spiced lamb mixture.
- Remove from heat and fold in the dill yogurt sauce until creamy. Serve immediately with extra dill and a squeeze of fresh lemon if desired.
Notes
This pasta tastes best served immediately while warm and creamy. You can add spinach, olives, or feta for a Mediterranean twist, or substitute ground beef or turkey if lamb is unavailable.
