Method
- Heat olive oil in a large skillet over medium heat.
- Add ground beef and cook until browned, breaking it up as it cooks.
- Add onion, garlic, and bell pepper. Sauté until softened.
- Stir in sweet potatoes, diced tomatoes, and Southwest seasoning. Mix well.
- Cover and cook for 12–15 minutes, stirring occasionally, until potatoes are tender.
- Remove lid and let excess moisture cook off for 2–3 minutes. Adjust seasoning to taste.
- Serve warm, optionally with rice or salad.
Notes
Use pre-diced sweet potatoes to save prep time. Ground turkey can be substituted for a lighter version. Stores well for meal prep and reheats easily.
