  • 1 tbsp olive oil
  • 1 lb lean ground beef
  • 2 cups sweet potatoes peeled and diced
  • 1 bell pepper chopped
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup diced tomatoes with juice
  • 1 tbsp Southwest seasoning

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it up as it cooks.
  3. Add onion, garlic, and bell pepper. Sauté until softened.
  4. Stir in sweet potatoes, diced tomatoes, and Southwest seasoning. Mix well.
  5. Cover and cook for 12–15 minutes, stirring occasionally, until potatoes are tender.
  6. Remove lid and let excess moisture cook off for 2–3 minutes. Adjust seasoning to taste.
  7. Serve warm, optionally with rice or salad.

Notes

Use pre-diced sweet potatoes to save prep time. Ground turkey can be substituted for a lighter version. Stores well for meal prep and reheats easily.
