Heat olive oil in a skillet over medium heat. Sauté onion until translucent, about 3-4 minutes.
Add 1 tablespoon minced garlic and stir for 30 seconds until fragrant. Remove from heat and let cool slightly.
In a bowl, combine cooled onion mixture, ground turkey, fresh parsley, fresh basil, egg, salt, and pepper. Mix gently with your hands until just combined.
Roll the mixture into 1.5-inch meatballs (about 18-20). Place them in the slow cooker.
Add crushed tomatoes, diced tomatoes, remaining 1 tablespoon garlic, dried parsley, dried basil, dried oregano, onion powder, and extra salt and pepper. Stir gently.
Cover and cook on high for 4 hours or low for 6-8 hours, until meatballs are cooked through.
Taste sauce and adjust seasoning. Garnish with fresh herbs and serve over pasta or vegetables.
