Ingredients
  

Roasted Beef and Carrots
  • 1 lb ground beef
  • 4 carrots peeled and sliced into sticks
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 1 tbsp fresh parsley chopped, optional for garnish

Method
 

  1. Preheat the oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. Peel and slice the carrots into evenly sized sticks so they roast evenly.
  3. Place the carrots on one side of the sheet pan. Drizzle with olive oil and season with salt, pepper, garlic powder, and onion powder. Toss to coat.
  4. Roast the carrots in the oven for about 10 minutes so they begin to soften.
  5. While the carrots roast, crumble the ground beef into small pieces.
  6. Carefully remove the sheet pan from the oven and spread the ground beef across the empty side of the pan.
  7. Season the beef lightly with salt and pepper.
  8. Return the pan to the oven and roast for 12 to 15 minutes, stirring the beef halfway through cooking so it browns evenly.
  9. Once the beef is fully cooked and the carrots are tender and lightly browned, remove from the oven.
  10. Sprinkle with fresh parsley if desired and serve warm.

Notes

You can add extra vegetables like bell peppers, zucchini, or diced potatoes to make this sheet pan meal more filling. Serve it over rice, quinoa, or mashed potatoes for a heartier dinner.
