Potato Layer
  • 2 pounds russet or Yukon Gold potatoes thinly sliced
Onion Cream Sauce
  • 2 tablespoons butter
  • 2 medium yellow onions thinly sliced
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 teaspoon salt divided
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese optional

Method
 

  1. Preheat your oven to 375 degrees F. Lightly grease a baking dish.
  2. In a large skillet, melt the butter over medium heat. Add the sliced onions and a pinch of salt. Cook for 15 to 20 minutes, stirring often, until soft and golden brown.
  3. Sprinkle the flour over the onions and stir well. Cook for 1 minute. Slowly pour in the milk while stirring constantly. Simmer until the sauce thickens slightly. Stir in remaining salt and black pepper.
  4. Layer half of the sliced potatoes evenly in the prepared baking dish. Spoon half of the onion cream sauce over the top. Repeat with remaining potatoes and sauce.
  5. If using cheese, sprinkle it evenly over the top.
  6. Cover with foil and bake for 40 minutes. Remove foil and bake an additional 20 to 25 minutes, until the potatoes are fork tender and the top is lightly golden.
  7. Let the casserole rest for 10 minutes before serving so it sets nicely.

Notes

Slice the potatoes evenly so they cook at the same rate. For extra flavor, add minced garlic to the onions while caramelizing. This dish pairs beautifully with roasted chicken, grilled steak, or sausage.
