  • 2 cups sauerkraut drained
  • 2 medium apples thinly sliced
  • 2 heads bok choy chopped
  • 1 small onion sliced
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp caraway seeds optional
  • 1/2 tsp black pepper
  • salt to taste
  • 1 tbsp apple cider vinegar

Method
 

  1. Heat a large skillet over medium heat. Add olive oil and sliced onion. Cook for about 3 minutes until soft and fragrant.
  2. Add the minced garlic and cook for another 30 seconds, stirring gently so the garlic does not burn.
  3. Add the ground sausage to the skillet. Break it apart with a spoon and cook until browned and fully cooked.
  4. Stir in the sliced apples and cook for 3 to 4 minutes until slightly softened but still holding their shape.
  5. Add the drained sauerkraut and caraway seeds. Mix well and cook for another 3 minutes so the flavors blend together.
  6. Add the chopped bok choy and cook for about 2 minutes until the leaves wilt but remain bright and tender.
  7. Drizzle the apple cider vinegar over the mixture. Taste and adjust salt and pepper if needed. Serve warm.

Notes

Choose crisp apples like Honeycrisp or Fuji for the best texture. You can also substitute ground turkey or chicken for a lighter version. Serve with crusty bread, rice, or roasted potatoes for a complete meal.
