Frittata Base
  • 8 large eggs
  • 1 cup ground sausage cooked
  • 1 cup mushrooms sliced
  • 1/2 cup onion chopped
  • 1/2 cup shredded cheese cheddar or mozzarella
  • 1/4 cup milk
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp parsley chopped, or green onion

Method
 

  1. Preheat oven to 375 F. In a bowl whisk together eggs, milk, salt, and black pepper until smooth and slightly frothy.
  2. Heat olive oil in an oven-safe skillet over medium heat. Add chopped onion and sliced mushrooms and cook for 4 to 5 minutes until soft and lightly golden.
  3. Add the cooked ground sausage to the skillet and stir for about 2 minutes to warm and combine with the vegetables.
  4. Pour the egg mixture evenly over the sausage and vegetables. Gently shake the pan so the eggs spread between the ingredients.
  5. Sprinkle shredded cheese evenly on top and cook on the stovetop for about 2 minutes until the edges start to set.
  6. Transfer the skillet to the oven and bake for 12 to 15 minutes until the center is set and the top is lightly golden.
  7. Remove from oven and sprinkle with chopped parsley or green onion. Let the frittata rest for 5 minutes before slicing and serving.

Notes

You can customize this frittata by adding spinach, bell peppers, cherry tomatoes, or feta cheese. It is also great for meal prep and reheats well for quick breakfasts or dinners.
