Ingredients
  

Sausage & Guinness Gravy Base
  • 1 lb ground sausage mild or hot
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 tbsp all purpose flour
  • 1 cup Guinness stout
  • 1 cup beef broth
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper or to taste
Casserole Layer
  • 2 lbs Yukon gold potatoes peeled and thinly sliced
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat your oven to 375 degrees F and lightly grease a medium baking dish.
  2. Peel and slice the potatoes into thin, even rounds so they cook evenly. Dice the onion and mince the garlic.
  3. Brown the ground sausage in a large skillet over medium heat until fully cooked, then remove excess grease.
  4. Add the onion and garlic to the skillet and cook until soft and fragrant.
  5. Sprinkle flour over the mixture and stir well to coat evenly.
  6. Slowly pour in the Guinness stout and beef broth, stirring constantly until the gravy thickens.
  7. Layer the sliced potatoes in the prepared baking dish and pour the sausage and Guinness gravy evenly over the top.
  8. Cover with foil and bake for 45 to 55 minutes until the potatoes are tender. Remove the foil and bake for 10 more minutes to lightly brown the top. Sprinkle with fresh parsley before serving.

Notes

You can assemble this casserole up to one day in advance and refrigerate before baking. Let it sit at room temperature for about 20 minutes before placing it in the oven. For slow cooker preparation, layer everything in a greased crockpot and cook on low for 6 to 7 hours until the potatoes are tender.
