Ingredients
  

Meatballs
  • 500 g ground beef
  • 1 cup cooked lentils
  • 1 egg
  • 1/2 cup breadcrumbs
  • 2 cloves garlic minced
  • 1/2 onion finely chopped
  • salt and pepper to taste
Sauce
  • 2 cups tomato sauce
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning

Method
 

  1. In a large bowl, mix ground beef, cooked lentils, egg, breadcrumbs, garlic, onion, salt, and pepper. Mix gently until combined.
  2. Shape the mixture into small meatballs, about the size of a golf ball.
  3. Heat olive oil in a large pan over medium heat. Add meatballs and brown on all sides for 6 to 8 minutes.
  4. Pour in tomato sauce and sprinkle Italian seasoning over the meatballs. Stir gently to coat.
  5. Cover and simmer for 15 to 20 minutes until the sauce thickens and the meatballs are cooked through.
  6. Taste and adjust seasoning if needed. Serve warm with pasta, rice, or bread.

Notes

You can prepare the lentils ahead of time or use canned lentils for convenience. These meatballs also freeze well, making them perfect for meal prep.
