  • 1 pound ground beef
  • 1 bag tortilla chips large
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella or Monterey Jack
  • 1 cup canned black beans drained
  • 1 cup corn kernels
  • 1 small tomato diced
  • 1 small red onion finely chopped
  • Pickled jalapenos optional
  • Sour cream for serving
  • Fresh cilantro optional

Method
 

  1. Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks.
  2. Sprinkle salt, paprika, garlic powder, and onion powder over the beef. Stir well and cook for 2 more minutes until fragrant.
  3. Turn off the heat. Taste and adjust seasoning if needed. The beef should be juicy and well coated.
  4. Preheat your oven to 375°F (190°C). Spread tortilla chips in an even layer on a large baking tray.
  5. Spoon the seasoned beef over the chips. Scatter black beans and corn on top.
  6. Add shredded cheeses evenly over everything. Make sure some cheese reaches the edges.
  7. Bake for 10 to 12 minutes until the cheese is fully melted and bubbling.
  8. Remove from the oven. Top with diced tomato, red onion, and jalapenos if using.
  9. Finish with sour cream and cilantro. Serve hot while the chips are crisp.

Notes

Do not overcrowd the tray. Too many layers can make soggy chips. Drain excess fat from the beef if needed. Seasoning is key. Use thick chips, grate cheese fresh, and experiment with toppings.
