Method
- Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
- Cut the rye bread into cubes. Drain the sauerkraut and gently squeeze out excess moisture. Slice or chop the corned beef into bite-sized pieces.
- In a small bowl, whisk together the mayonnaise, ketchup, and relish to make the dressing.
- Spread half of the bread cubes in the bottom of the baking dish. Layer with half the corned beef, sauerkraut, and shredded cheese. Repeat the layers with the remaining ingredients.
- Drizzle the creamy dressing evenly over the top layer of cheese.
- Cover the dish with foil and bake for 25 to 30 minutes. Remove foil and bake another 10 to 12 minutes until bubbly and golden.
- Let rest for 5 minutes before serving.
Notes
This Reuben Bake can be made a day ahead. Store tightly covered in the fridge and bake when ready. Also try variations like adding cabbage or swapping rye bread with crescent dough.
