  • 4 cups rye bread cubed
  • 2 cups corned beef sliced or chopped
  • 1 1/2 cups sauerkraut drained
  • 2 cups Swiss cheese shredded
  • 3 tbsp butter melted
Creamy Dressing
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 1 tbsp pickle relish

Method
 

  1. Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
  2. Cut the rye bread into cubes. Drain the sauerkraut and gently squeeze out excess moisture. Slice or chop the corned beef into bite-sized pieces.
  3. In a small bowl, whisk together the mayonnaise, ketchup, and relish to make the dressing.
  4. Spread half of the bread cubes in the bottom of the baking dish. Layer with half the corned beef, sauerkraut, and shredded cheese. Repeat the layers with the remaining ingredients.
  5. Drizzle the creamy dressing evenly over the top layer of cheese.
  6. Cover the dish with foil and bake for 25 to 30 minutes. Remove foil and bake another 10 to 12 minutes until bubbly and golden.
  7. Let rest for 5 minutes before serving.

Notes

This Reuben Bake can be made a day ahead. Store tightly covered in the fridge and bake when ready. Also try variations like adding cabbage or swapping rye bread with crescent dough.
