  • 1 pound ground beef
  • 1 small onion chopped
  • 1 can corn drained
  • 1 can black beans drained and rinsed
  • 1 cup cooked rice
  • 1 can diced tomatoes with green chiles
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup crushed corn chips
  • 1 egg
  • 1 cup milk

Method
 

  1. Preheat the oven to 375°F and grease a baking dish.
  2. Cook the ground beef and onion in a skillet until browned and soft. Drain excess fat.
  3. Add corn, black beans, cooked rice, diced tomatoes, chili powder, garlic powder, salt, and pepper. Stir until combined.
  4. In a bowl, whisk the egg and milk together until smooth.
  5. Pour the beef mixture into the baking dish and spread evenly.
  6. Pour the egg mixture over the top to help everything bind.
  7. Sprinkle shredded cheese evenly across the surface.
  8. Top with crushed corn chips for a crunchy finish.
  9. Bake uncovered for 30 to 35 minutes until bubbly and golden.
  10. Let rest for 5 minutes before serving.

Notes

Use freshly shredded cheese for better melting. You can make this dish a day ahead and store it in the fridge. It reheats well and also freezes nicely.
