- Pour the egg mixture over the top to help everything bind.
- Sprinkle shredded cheese evenly across the surface.
- Top with crushed corn chips for a crunchy finish.
- Bake uncovered for 30 to 35 minutes until bubbly and golden.
- Let rest for 5 minutes before serving.
Notes
Use freshly shredded cheese for better melting. You can make this dish a day ahead and store it in the fridge. It reheats well and also freezes nicely.
