Ingredients

Main Ingredients
  • 1 box Jiffy cornbread mix
  • 2 eggs lightly beaten
  • 1/2 cup sour cream
  • 1/4 cup butter melted
  • 1 cup frozen chopped broccoli thawed and drained
  • 1/2 cup corn kernels drained if canned
  • 1 cup shredded cheddar cheese

Equipment

  • 9x13 baking dish
  • Mixing Bowl
  • Oven

Method

  1. Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large bowl, combine cornbread mix, sour cream, melted butter, and eggs. Mix until smooth.
  3. Stir in chopped broccoli, corn, and shredded cheddar cheese until evenly distributed.
  4. Pour the mixture into the prepared baking dish and spread it evenly.
  5. Bake for 25–30 minutes, or until the top is golden and the center is set.
  6. Let it cool for a few minutes before serving. Enjoy warm for best flavor and texture.

Notes

Use fresh broccoli instead of frozen if desired—lightly steam it before mixing. Add extra cheese on top for a more indulgent version, or crushed crackers for a crispy topping. To make ahead, prepare and refrigerate the mixture, then bake when ready.
