Ingredients
  

Meatloaf Mixture
  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/3 cup milk
  • 1 egg
  • 1/4 cup onion finely chopped
  • 2 cloves garlic minced
  • 1/4 cup ketchup
  • 1 tbsp mustard
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried parsley
  • 1/2 tsp paprika
Topping
  • extra ketchup for glaze

Method
 

  1. Preheat oven to 375°F (190°C) and grease or line a baking pan.
  2. In a bowl, combine breadcrumbs and milk. Let sit for 2 minutes to soften.
  3. Add ground chicken, egg, onion, garlic, ketchup, mustard, salt, pepper, parsley, and paprika. Mix gently until just combined.
  4. Divide mixture and shape into small mini meatloaves. Place on the prepared pan.
  5. Spread ketchup on top of each loaf.
  6. Bake for 20–25 minutes until fully cooked (internal temp 165°F / 74°C).
  7. Rest for 5 minutes before serving.

Notes

Avoid overmixing to keep the meatloaves tender. Add a little olive oil for extra moisture if desired. You can swap breadcrumbs with oats or crushed crackers.
