Method
- Preheat oven to 375°F (190°C) and grease or line a baking pan.
- In a bowl, combine breadcrumbs and milk. Let sit for 2 minutes to soften.
- Add ground chicken, egg, onion, garlic, ketchup, mustard, salt, pepper, parsley, and paprika. Mix gently until just combined.
- Divide mixture and shape into small mini meatloaves. Place on the prepared pan.
- Spread ketchup on top of each loaf.
- Bake for 20–25 minutes until fully cooked (internal temp 165°F / 74°C).
- Rest for 5 minutes before serving.
Notes
Avoid overmixing to keep the meatloaves tender. Add a little olive oil for extra moisture if desired. You can swap breadcrumbs with oats or crushed crackers.
