- Chop the garlic and measure all seasonings. Warm olive oil in a large skillet over medium heat.
- Stir the garlic in the warm oil for about one minute until fragrant.
- Add the tomato paste and cook for 1β2 minutes to deepen flavor.
- Pour in the chicken broth and heavy cream. Whisk until smooth.
- Season with Italian seasoning, crushed red pepper, and salt. Bring to a gentle simmer.
- Add tortellini and cook for 5β7 minutes until tender.
- Stir in Parmesan until sauce thickens and coats the pasta.
- Let rest for 1 minute before serving. Garnish with extra Parmesan if desired.
Notes
To lighten the sauce, use half cream and half broth. Add spinach, chicken, or sun-dried tomatoes for variations. Frozen tortellini works too; add 1β2 minutes cook time.
