  • 20 oz cheese tortellini refrigerated or frozen
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 1/2 cup heavy cream
  • 3/4 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes
  • 1/2 cup Parmesan cheese freshly grated
  • to taste salt

Method
 

  1. Chop the garlic and measure all seasonings. Warm olive oil in a large skillet over medium heat.
  2. Stir the garlic in the warm oil for about one minute until fragrant.
  3. Add the tomato paste and cook for 1–2 minutes to deepen flavor.
  4. Pour in the chicken broth and heavy cream. Whisk until smooth.
  5. Season with Italian seasoning, crushed red pepper, and salt. Bring to a gentle simmer.
  6. Add tortellini and cook for 5–7 minutes until tender.
  7. Stir in Parmesan until sauce thickens and coats the pasta.
  8. Let rest for 1 minute before serving. Garnish with extra Parmesan if desired.

Notes

To lighten the sauce, use half cream and half broth. Add spinach, chicken, or sun-dried tomatoes for variations. Frozen tortellini works too; add 1–2 minutes cook time.
