Ingredients
  

Meat Layer
  • 1 lb ground beef or Italian sausage
  • 1 tbsp olive oil
  • 1/2 cup onion chopped
  • 1/2 cup bell pepper chopped
Sauce and Toppings
  • 1 cup marinara or pizza sauce no sugar added
  • 1 tsp Italian seasoning
  • 2 cups shredded mozzarella cheese
  • 1/2 cup pepperoni slices

Method
 

  1. Preheat your oven to 375 degrees and lightly grease a baking dish with olive oil.
  2. In a large skillet over medium heat, cook the ground beef or sausage until browned, breaking it apart as it cooks. Drain excess grease.
  3. Add chopped onions and bell peppers to the skillet and cook for 3 to 5 minutes until softened.
  4. Stir in the marinara sauce and Italian seasoning. Simmer for about 5 minutes to blend the flavors.
  5. Transfer the meat mixture into the prepared baking dish and spread evenly.
  6. Top with shredded mozzarella cheese and arrange pepperoni slices over the cheese.
  7. Bake for 20 to 25 minutes until the cheese is melted and bubbly. Let rest for 5 minutes before serving.

Notes

For a cauliflower twist, stir in 1 cup of steamed cauliflower rice with the meat mixture. You can also swap ground beef for turkey, or add mushrooms, olives, or spinach for extra flavor. Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months.
