Casserole
  • 1 lb Italian sausage
  • 6 eggs
  • 1 1/2 cups shredded mozzarella cheese
  • 2 bell peppers chopped
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1/2 cup heavy cream
  • 1 tsp Italian seasoning
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste

Method
 

  1. Preheat your oven to 375 degrees F and grease a baking dish.
  2. Chop the bell peppers and onion into small even pieces.
  3. Crack the eggs into a bowl and whisk with the heavy cream, Italian seasoning, salt, and black pepper.
  4. Heat a skillet over medium heat and cook the Italian sausage until browned.
  5. Add the chopped bell peppers and onion and cook for 5 to 6 minutes until softened.
  6. Stir in the garlic and cook for 1 minute, then remove from heat.
  7. Spread the sausage mixture evenly into the prepared baking dish.
  8. Pour the egg mixture over the top and sprinkle with shredded mozzarella cheese.
  9. Bake for 25 to 30 minutes until the casserole is set and golden on top.
  10. Let rest for 5 minutes before slicing and serving.

Notes

You can prepare this casserole the night before and bake it fresh the next day. It also freezes well after baking and cooling completely. For variety, swap the sausage with ground beef, add spinach, or use cheddar cheese instead of mozzarella.
