  • 1 pound ground beef 85% lean
  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1 cup zucchini chopped
  • 1 cup cauliflower florets chopped
  • 1 bell pepper chopped
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1/2 tsp black pepper
  • 2 tbsp tomato paste
  • 1/2 cup cheddar cheese shredded, optional
  • fresh parsley for garnish

Method
 

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft and lightly golden.
  2. Add the minced garlic to the skillet. Stir and cook for about 30 seconds until fragrant.
  3. Add the ground beef. Break it apart with a spoon and cook until browned and no longer pink.
  4. Season the beef with salt, black pepper, paprika, and Italian seasoning. Stir well so the flavors coat the meat.
  5. Add the chopped zucchini, cauliflower, and bell pepper. Stir and cook for 5 to 7 minutes until the vegetables are tender.
  6. Stir in the tomato paste. Let it cook for 2 minutes so it blends and deepens in flavor.
  7. Lower the heat. Sprinkle cheese on top if using. Cover the skillet and let it melt.
  8. Turn off the heat. Garnish with fresh parsley and serve warm.

Notes

To avoid steaming the beef, cook in batches if needed. Season early for depth of flavor. Avoid overcooking the vegetables — they should be tender but firm. Great for keto and meal prep!
