Ingredients
  

Chicken
  • 2 chicken breasts or thighs boneless and skinless
  • 1 tbsp olive oil
  • 1 tsp dried Italian herbs
  • salt and pepper to taste
Buttered Lemon Noodles
  • 8 oz egg noodles
  • 3 tbsp butter
  • 2 cloves garlic minced
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh parsley chopped

Method
 

  1. Bring a large pot of salted water to a boil. Cook the egg noodles according to package instructions, about 8 to 10 minutes. Drain and set aside.
  2. Season the chicken with salt, pepper, and dried Italian herbs.
  3. Heat olive oil in a large skillet over medium heat. Cook the chicken for 5 to 6 minutes per side until golden and fully cooked.
  4. Remove the chicken from the pan and allow it to rest for a few minutes before slicing.
  5. In the same skillet, melt the butter and add the minced garlic. Cook for about 1 minute until fragrant.
  6. Stir in the fresh lemon juice and add a small splash of pasta water if desired to create a light sauce.
  7. Add the cooked noodles to the skillet and toss gently until coated in the lemon butter sauce.
  8. Slice the chicken and place it over the noodles. Sprinkle with fresh parsley and serve warm.

Notes

You can easily customize this dish by adding vegetables like peas, spinach, or broccoli. Chicken thighs can replace chicken breasts for a richer flavor, and whole wheat noodles can be used for a higher fiber option.
