Ingredients
  

Lamb and Marinade
  • 1.5 pounds lamb shoulder or leg cut into small cubes
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika

Method
 

  1. Place the lamb pieces in a large bowl. Add olive oil, lemon juice, garlic, oregano, salt, pepper, and paprika. Mix well so every piece is coated.
  2. Cover the bowl and let the lamb marinate for at least 30 minutes. This helps the meat stay juicy and full of flavor.
  3. If using wooden skewers, soak them in water for 20 minutes. This keeps them from burning while cooking.
  4. Thread the marinated lamb onto the skewers, leaving a little space between pieces so they cook evenly.
  5. Heat a grill pan or outdoor grill over medium heat. Lightly oil the surface.
  6. Place the skewers on the hot grill. Cook for about 8 to 10 minutes, turning every few minutes until browned and cooked through.
  7. Remove the lamb souvlaki from the grill and let it rest for 5 minutes before serving.

Notes

To avoid drying out the lamb, do not cut the pieces too small. Marinating adds essential flavor and tenderness, and spacing the meat on skewers helps browning. Serve with pita, salad, or roasted veggies. Great for make-ahead meals too.
