Ingredients
  

Lamb Mixture
  • 1 pound ground lamb
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tbsp olive oil optional, if pan is dry
Tacos
  • 8 small flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 small red onion thinly sliced
  • 1 cup crumbled feta cheese
  • 1 cup plain Greek yogurt or tzatziki sauce

Method
 

  1. Place the ground lamb in a bowl. Add salt, pepper, garlic powder, oregano, and paprika. Mix gently until just combined.
  2. Lay a tortilla flat on your counter. Spread a thin layer of the lamb mixture over one side of the tortilla. Press it down evenly.
  3. Heat a large skillet over medium heat. Place the tortilla lamb side down into the hot pan. Press lightly with a spatula.
  4. Cook for 3 to 4 minutes until the lamb is browned and crispy. Flip the tortilla and cook the other side for 1 to 2 minutes until golden.
  5. Remove from the pan and repeat with the remaining tortillas and lamb.
  6. Top each taco with lettuce, tomatoes, red onion, feta, and a spoon of yogurt or tzatziki. Fold and serve warm.

Notes

To enhance flavor, add a pinch of cumin or chopped parsley to the lamb. Serve with lemon rice or cucumber salad for a complete meal. Store leftovers in the fridge up to 3 days. Reheat in a skillet for best texture.
