- Pat the lamb chops dry with paper towels and season both sides with salt and black pepper.
- Heat olive oil in a large skillet over medium high heat.
- Add the lamb chops and sear for 3 to 4 minutes on the first side until nicely browned.
- Flip the chops and cook another 3 to 4 minutes until the second side browns and the lamb reaches your preferred doneness.
- Add the minced garlic, honey, and red wine vinegar to the pan. Let the mixture simmer for about 2 minutes while spooning the glaze over the lamb.
- Transfer the lamb chops to a serving plate. Sprinkle toasted walnuts, crumbled feta, and fresh parsley over the top. Spoon extra glaze from the pan over the lamb and serve warm.
Notes
For best flavor, choose lamb chops with good marbling. The fat helps keep the meat tender during cooking. You can also substitute pistachios for walnuts or add lemon zest to the glaze for a brighter Mediterranean flavor.
