Ingredients
  

Chicken
  • 4 boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
Sandwich Assembly
  • 4 slices cheddar or provolone cheese
  • 4 keto friendly sandwich buns
  • 4 leaves lettuce
  • 1 tomato sliced
  • 1/4 cup mayonnaise or sugar free sauce

Method
 

  1. Pat the chicken thighs dry with paper towels to help them brown properly.
  2. Rub both sides with olive oil. Sprinkle garlic powder, paprika, salt, and black pepper evenly over each piece.
  3. Heat a skillet over medium heat. Cook the chicken for 6 to 8 minutes per side, until golden and cooked through to an internal temperature of 165°F.
  4. During the last minute of cooking, place a slice of cheese on each piece of chicken and cover the pan to melt.
  5. Lightly toast the keto buns in a dry skillet or oven until warm.
  6. Spread mayonnaise or sauce on the buns. Add lettuce, tomato, and the cheesy chicken. Top with the bun and serve immediately.

Notes

For extra crispiness, cook the seasoned chicken in an air fryer at 375°F for 15 to 18 minutes. You can also bake at 400°F for 20 to 25 minutes. Add sliced avocado or crispy bacon for extra flavor and healthy fats. Store leftover chicken in an airtight container in the refrigerator for up to 3 days and assemble sandwiches fresh before serving.
