- Preheat your oven to 375 F. Lightly grease a medium baking dish with olive oil.
- Heat a skillet over medium heat. Add the Italian sausage and cook until browned, breaking it into small pieces as it cooks.
- Add sliced onion and garlic to the skillet. Cook for 2 to 3 minutes until soft and fragrant.
- Stir in the sliced peppers, drained diced tomatoes, Italian seasoning, oregano, salt, and pepper. Cook for another 3 minutes so the flavors blend.
- Transfer the sausage and pepper mixture into the prepared baking dish and spread evenly.
- Sprinkle shredded mozzarella evenly over the top.
- Bake uncovered for 20 to 25 minutes, until the cheese is melted and bubbly with light golden spots.
- Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley before serving.
Notes
Use a mix of red, yellow, and green peppers for the best color and sweetness. For extra heat, choose spicy sausage or add red pepper flakes. This casserole can be assembled a day ahead and refrigerated before baking. Leftovers store well for up to 3 days or can be frozen for up to 2 months.
