Sausage Mixture
  • 1 pound Italian sausage mild or spicy
  • 3 bell peppers sliced, any color
  • 1 large onion sliced
  • 3 cloves garlic minced
  • 1 can diced tomatoes drained
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil
  • salt to taste
  • black pepper to taste
Topping
  • 1 cup mozzarella cheese shredded
  • fresh parsley for garnish, optional

Method
 

  1. Preheat your oven to 375 F. Lightly grease a medium baking dish with olive oil.
  2. Heat a skillet over medium heat. Add the Italian sausage and cook until browned, breaking it into small pieces as it cooks.
  3. Add sliced onion and garlic to the skillet. Cook for 2 to 3 minutes until soft and fragrant.
  4. Stir in the sliced peppers, drained diced tomatoes, Italian seasoning, oregano, salt, and pepper. Cook for another 3 minutes so the flavors blend.
  5. Transfer the sausage and pepper mixture into the prepared baking dish and spread evenly.
  6. Sprinkle shredded mozzarella evenly over the top.
  7. Bake uncovered for 20 to 25 minutes, until the cheese is melted and bubbly with light golden spots.
  8. Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley before serving.

Notes

Use a mix of red, yellow, and green peppers for the best color and sweetness. For extra heat, choose spicy sausage or add red pepper flakes. This casserole can be assembled a day ahead and refrigerated before baking. Leftovers store well for up to 3 days or can be frozen for up to 2 months.
