Sausage and Vegetables
  • 1 lb ground Italian sausage mild or spicy
  • 12 oz fresh green beans trimmed
  • 4 cups fresh spinach
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1 medium onion chopped
  • 1 tsp Italian seasoning
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste

Method
 

  1. Heat a large skillet over medium heat and add the olive oil.
  2. Add the ground Italian sausage and cook for 6 to 8 minutes, breaking it apart with a wooden spoon, until browned and cooked through.
  3. Stir in the chopped onion and minced garlic. Cook for 2 to 3 minutes, until softened and fragrant.
  4. Add the trimmed green beans and stir well. Cover the skillet and cook for 8 to 10 minutes, stirring occasionally, until the beans are tender but still bright.
  5. Add the fresh spinach and cook for 2 to 3 minutes, stirring, until wilted.
  6. Season with Italian seasoning, salt, and black pepper. Taste and adjust as needed. Serve warm.

Notes

Use pre trimmed green beans to save time. You can swap spinach for kale if desired. For extra comfort, sprinkle shredded mozzarella or Parmesan on top before serving. This dish can also be served over rice or pasta to stretch it further.
