- Preheat your oven to 400°F (200°C). Line a roasting pan with foil.
- Pat the chicken dry with paper towels to help it roast crisp.
- In a small bowl, mix olive oil, garlic, Italian seasoning, lemon zest, salt, and pepper.
- Rub the mixture all over the chicken, inside and out. Insert lemon slices and rosemary sprigs inside the cavity if using a whole bird.
- Roast uncovered for 45-55 minutes for pieces or 1 hour 15 minutes for a whole chicken, until juices run clear and internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10 minutes before slicing and serving.
Notes
Try adding honey for a sweet-savory twist, or extra herbs like thyme or basil. Serve with roasted veggies, pasta, or fresh salad. Leftovers taste even better the next day!
