  • 1 whole chicken or bone-in pieces
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 1 lemon zested and sliced
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 3 sprigs rosemary optional

Method
 

  1. Preheat your oven to 400°F (200°C). Line a roasting pan with foil.
  2. Pat the chicken dry with paper towels to help it roast crisp.
  3. In a small bowl, mix olive oil, garlic, Italian seasoning, lemon zest, salt, and pepper.
  4. Rub the mixture all over the chicken, inside and out. Insert lemon slices and rosemary sprigs inside the cavity if using a whole bird.
  5. Roast uncovered for 45-55 minutes for pieces or 1 hour 15 minutes for a whole chicken, until juices run clear and internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 10 minutes before slicing and serving.

Notes

Try adding honey for a sweet-savory twist, or extra herbs like thyme or basil. Serve with roasted veggies, pasta, or fresh salad. Leftovers taste even better the next day!
