Main Ingredients
  • 4 salmon fillets fresh or frozen, skin-on or off
  • 1 pound baby potatoes halved if large
  • 4 cups fresh greens such as spinach, kale, or Swiss chard
  • 3 tbsp butter divided
  • 4 cloves garlic minced
  • 1 cup water
  • 2 tbsp lemon juice freshly squeezed
  • salt and pepper to taste
  • 1 tbsp olive oil for drizzling on salmon

Method
 

  1. Season the salmon fillets with salt, pepper, and a drizzle of olive oil. Set aside.
  2. Place baby potatoes, butter, minced garlic, and 1 cup of water in the Instant Pot. Place the trivet over the potatoes.
  3. Set the salmon fillets on the trivet. Secure the lid and cook on high pressure for 4 minutes.
  4. Quick release the pressure and carefully open the lid.
  5. Remove the salmon and potatoes. Add greens to the warm pot and stir until wilted.
  6. Drizzle lemon juice and a bit more melted butter over the dish before serving.

Notes

You can swap potatoes for cauliflower or sweet potatoes. Sprinkle Parmesan on top for extra flavor. Use frozen salmon if needed, adding 1 extra minute to the cooking time.
