  • 1 lb ground beef
  • 1 cup hummus
  • 2 cups cherry tomatoes
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley chopped
  • warm pita optional for serving
  • cooked rice optional for serving

Method
 

  1. Place a large skillet on the stove over medium heat. Add the olive oil and let it warm for about 30 seconds.
  2. Add the ground beef to the skillet. Break it apart with a spoon as it cooks so the pieces stay small and tender.
  3. Stir in the minced garlic, paprika, cumin, salt, and black pepper. Cook for 3 to 4 minutes until the beef is browned and the spices are fragrant.
  4. Add the cherry tomatoes to the skillet and cook for about 3 minutes, until they soften and release a little juice.
  5. Spoon the hummus into the bottom of each bowl and spread it gently with the back of a spoon.
  6. Scoop the warm spiced beef and tomatoes over the hummus.
  7. Sprinkle with fresh parsley and serve with warm pita or rice, if desired.

Notes

You can swap the ground beef for ground turkey or lamb if you want a different flavor. Add cucumbers, shredded lettuce, yogurt, or an extra drizzle of olive oil for more texture and creaminess. Store leftover beef mixture in an airtight container in the refrigerator for up to 3 days and serve over fresh hummus when ready to eat.
