- Bring a large pot of salted water to a boil and cook the noodles according to package directions.
- While the noodles cook, mince the garlic, grate the fresh ginger, and slice the green onions.
- In a small bowl, whisk together the soy sauce, sesame oil, brown sugar, rice vinegar, and red pepper flakes to make the sauce.
- Heat a large skillet over medium heat and add the Italian sausage. Cook, breaking it into small crumbles, until browned and fully cooked.
- Add the garlic and ginger to the skillet and cook for about 1 minute, until fragrant.
- Pour the sesame sauce into the skillet and stir gently to coat the sausage.
- Add the drained noodles to the skillet and toss until every strand is coated in the sauce.
- Sprinkle with sesame seeds and sliced green onions. Taste and adjust with more soy sauce if needed, then serve warm.
Notes
Use pre-minced garlic and ginger to save time, or swap in pre-cooked sausage for an even faster version. You can also add shredded carrots, snap peas, or cabbage for extra texture and color.
