  • 1 pound lean ground beef
  • 2 cups cooked white or brown rice
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1/3 cup low sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tbsp sesame oil
  • 1 tsp rice vinegar
  • 1 tsp cornstarch mixed with 2 tbsp water
  • 1 cup shredded carrots
  • 1 cup chopped green onions divided
  • sesame seeds for topping

Method
 

  1. Cook the rice according to package directions and keep it warm.
  2. Heat a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks.
  3. Add garlic and ginger. Stir for 30 seconds until fragrant.
  4. Mix soy sauce, honey, sesame oil, and rice vinegar in a small bowl. Pour into the skillet with the beef.
  5. Add the cornstarch slurry and stir until the sauce thickens and coats the beef.
  6. Stir in shredded carrots and half the green onions. Cook for 2 more minutes.
  7. Serve over warm rice, topped with remaining green onions and sesame seeds.

Notes

Use lean beef to avoid excess grease. Adjust sauce sweetness to taste. Store beef and rice separately for up to 4 days. Great for meal prep and reheats well.
