Ingredients
  

Chicken Marinade
  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp dried herbs such as thyme or oregano
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper or to taste

Method
 

  1. Preheat your grill to medium-high heat. Clean and lightly oil the grates.
  2. In a bowl, mix olive oil, lemon juice, garlic, paprika, salt, and pepper.
  3. Add the chicken breasts to the marinade and turn to coat well. Let sit for 10 minutes while the grill heats.
  4. Place chicken on the grill. Cook for 6 to 7 minutes per side, or until juices run clear and internal temperature reaches 165°F (74°C).
  5. Remove chicken from the grill and let rest for 5 minutes before slicing.

Notes

For added flavor, sprinkle chili flakes into the marinade or use smoked paprika. You can also cook this in foil packets with vegetables for a one-pack grill meal. Serve sliced over salad, in wraps, or with grilled veggies for a complete meal.
