Method
- Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
- Heat olive oil in a skillet over medium heat. Add diced onion and cook until soft.
- Add garlic and cook briefly until fragrant.
- Add ground beef and cook until browned, breaking it apart.
- Stir in taco seasoning and water. Simmer until thickened.
- Place tortillas on the sheet pan and add beef mixture to one half of each.
- Sprinkle cheese over beef and fold tortillas in half.
- Lightly brush or spray with oil and bake for 10–12 minutes until crispy and golden.
- Let cool slightly and serve with desired toppings.
Notes
Avoid overfilling tortillas to keep them crisp. For extra crunch, bake directly on the oven rack for the last few minutes.
