Ingredients
  

Beef Filling
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 1/3 cup water
Assembly
  • 8 small corn tortillas
  • 1 cup shredded cheese cheddar or Mexican blend
  • salt and pepper to taste
  • lettuce, tomatoes, sour cream, avocado optional toppings

Method
 

  1. Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Add diced onion and cook until soft.
  3. Add garlic and cook briefly until fragrant.
  4. Add ground beef and cook until browned, breaking it apart.
  5. Stir in taco seasoning and water. Simmer until thickened.
  6. Place tortillas on the sheet pan and add beef mixture to one half of each.
  7. Sprinkle cheese over beef and fold tortillas in half.
  8. Lightly brush or spray with oil and bake for 10–12 minutes until crispy and golden.
  9. Let cool slightly and serve with desired toppings.

Notes

Avoid overfilling tortillas to keep them crisp. For extra crunch, bake directly on the oven rack for the last few minutes.
