Ingredients
  

Chili Layer
  • 1 lb lean ground beef or ground turkey
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 can low sodium beans drained and rinsed
  • 1 can diced tomatoes undrained
  • 2 tbsp chili seasoning mild
Topping
  • 1 1/2 cups reduced fat shredded cheddar cheese
  • 1 bag baked tater tots frozen

Method
 

  1. Preheat the oven to 400°F (200°C) and lightly grease a casserole dish.
  2. In a large skillet over medium heat, cook the ground meat until browned and cooked through.
  3. Add the chopped onion and minced garlic. Sauté until soft and fragrant.
  4. Stir in the beans, diced tomatoes, and chili seasoning. Simmer for 10–12 minutes.
  5. Spread the chili mixture evenly in the prepared casserole dish.
  6. Sprinkle the shredded cheese on top, then layer with frozen tater tots.
  7. Bake uncovered for 25–30 minutes, or until the tater tots are golden and crisp.

Notes

Customize this casserole with bell peppers, pepper jack cheese, or even zucchini for added nutrition. Prepare the chili mixture ahead of time for quick assembly during the week.
