Ingredients
  

Lamb Mixture
  • 1 lb ground lamb with moderate fat
  • 2 cloves garlic minced
  • 1/4 cup onion finely chopped
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
Serving
  • 4 pita breads warmed
  • fresh toppings like tomato, cucumber, onion, tzatziki

Method
 

  1. Add ground lamb to a large bowl and break it apart gently.
  2. Mix in garlic, onion, oregano, cumin, salt, and pepper until just combined.
  3. Shape the mixture into a compact loaf or thick patties.
  4. Heat a skillet over medium heat and add olive oil.
  5. Place the lamb in the pan and cook for 5 to 6 minutes per side.
  6. Lower heat slightly and cook until fully done and lightly crisped.
  7. Rest the meat for 5 minutes to keep it juicy.
  8. Slice thinly for classic gyro texture.
  9. Serve in warm pita with fresh toppings.

Notes

You can prep the seasoned meat a day in advance for quick cooking. For variety, try mixing lamb with beef or pork, or serve over salad for a low-carb meal.
