Noodles
  • 12 oz egg noodles
  • 1/4 cup pasta cooking water reserved
Meat Mixture
  • 1 lb ground turkey or ground beef turkey mix
  • 3 tbsp butter
  • 3 cloves garlic minced
  • 1 small onion finely chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp dried parsley
  • 1/4 cup parmesan cheese grated
  • fresh parsley optional, for garnish

Method
 

  1. Bring a large pot of salted water to a boil. Add the egg noodles and cook according to the package instructions until tender. Reserve about 1/4 cup of pasta water, then drain the noodles.
  2. While the noodles cook, heat a large skillet over medium heat. Add the ground turkey and chopped onion. Cook for 6 to 7 minutes, breaking up the meat, until browned and the onion softens.
  3. Add the minced garlic, salt, black pepper, paprika, and dried parsley. Stir well and cook for 1 minute until fragrant.
  4. Add the butter to the skillet and let it melt into the meat mixture to create a rich, buttery base.
  5. Add the cooked egg noodles to the skillet and toss gently until the noodles are coated with the butter and seasoned meat mixture.
  6. Pour in a splash of the reserved pasta water and toss again to help the butter and seasonings cling to the noodles.
  7. Sprinkle the grated parmesan cheese over the noodles and toss until everything is evenly mixed.
  8. Taste and adjust the salt if needed. Garnish with extra parsley if desired, then serve warm.

Notes

Do not overcook the noodles, or they may become mushy after mixing. A little reserved pasta water helps create a silky coating. For extra flavor, add mushrooms, spinach, chili flakes, or a splash of cream. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in a skillet with a little butter or water.
