Ingredients
  

Lamb
  • 4 lamb chops or small lamb steaks
  • 1 tbsp olive oil
  • salt and pepper to taste
Mint Orange Sauce
  • 1/4 cup orange juice freshly squeezed
  • 1 tsp orange zest
  • 2 tbsp fresh mint leaves finely chopped
  • 1 clove garlic minced
  • 1 tbsp honey

Method
 

  1. Pat your lamb chops dry and season them with salt, pepper, and olive oil. Let rest for 10 minutes while preheating the grill.
  2. Grill the lamb over medium-high heat for 3–4 minutes per side, or until browned and just tender inside. Alternatively, pan-sear indoors.
  3. While the lamb is grilling, whisk together orange juice, zest, chopped mint, garlic, and honey. Adjust with salt or more honey if needed.
  4. Let the grilled lamb rest for 5 minutes. Drizzle the mint orange sauce over the top or serve it on the side.
  5. Garnish with extra mint leaves and a sprinkle of orange zest before serving.

Notes

This mint orange sauce also pairs beautifully with other cuts of lamb or as a glaze for lamb patties and skewers. For variation, swap orange juice for lemon for a tangier finish.
