Ingredients
  

Lamb Marinade
  • 8 lamb chops about 1 inch thick
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
Mint Yogurt Sauce
  • 1 cup plain Greek yogurt
  • 2 tbsp fresh mint finely chopped
  • 1 tbsp fresh dill chopped
  • 1 tbsp olive oil for sauce
  • 1 small clove garlic grated
  • salt to taste for sauce

Method
 

  1. Pat the lamb chops dry with paper towels to help them grill evenly and develop a crust.
  2. Mix olive oil, garlic, lemon juice, oregano, salt, and pepper in a bowl to create the marinade.
  3. Rub the marinade over all lamb chops, coating evenly. Let rest for 20 minutes at room temperature.
  4. Preheat the grill or grill pan over medium-high heat and lightly oil the grates.
  5. Grill the lamb chops for 3–4 minutes per side, until nicely browned and medium inside.
  6. Remove from grill and let rest for 5 minutes to retain juices.
  7. Meanwhile, combine yogurt, mint, dill, olive oil, garlic, and salt to make the mint yogurt sauce.
  8. Stir the sauce until smooth, adjust seasoning, and serve with the grilled lamb chops.

Notes

Do not overcook the lamb — it cooks quickly and stays juiciest when medium. Allowing the meat to rest ensures tender results. For best sauce texture, use yogurt at room temperature. Fresh herbs and lemon zest can add extra brightness.
