  • 3 cups cooked chicken shredded or diced
  • 2 cans diced green chiles (4 oz each)
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup sour cream
  • 8 tortillas corn or flour
  • 2 cups shredded cheese cheddar or Monterey Jack
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • to taste salt and pepper

Method
 

  1. Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
  2. In a large bowl, combine shredded chicken, diced green chiles, cream of chicken soup, sour cream, and spices. Mix until smooth and creamy.
  3. Layer half of the tortillas on the bottom of the baking dish.
  4. Spread half of the chicken mixture over the tortillas and top with half of the cheese.
  5. Repeat the layers with remaining tortillas, chicken mixture, and cheese.
  6. Cover with foil and bake for 15 minutes. Remove foil and continue baking for another 10–15 minutes until cheese is melted and bubbly.
  7. Let rest for 5 minutes before serving. Garnish with fresh cilantro or lime wedges if desired.

Notes

To make it spicier, use hot green chiles or add diced jalapeños. You can also add corn or black beans for extra flavor. For a gluten-free option, use corn tortillas and gluten-free cream of chicken soup.
