- Pat the lamb chops dry with paper towels to help them sear well.
- Season both sides of the chops with salt and black pepper.
- Heat a heavy skillet over medium-high heat and add olive oil.
- Place the lamb chops in the pan and cook for 3 to 4 minutes per side.
- Lower the heat and add butter, garlic, rosemary, and thyme to the skillet.
- Spoon the melted garlic herb butter over the chops as they finish cooking.
- Remove the chops when they reach your preferred doneness and let rest for 5 minutes.
Notes
You can prep the garlic and herbs earlier to save time. Try adding a splash of lemon juice or a pinch of chili flakes for extra flavor. Let the lamb rest before slicing to keep it juicy.
