Ingredients

Main
  • 4 lamb chops about 1 inch thick
  • 1 tbsp olive oil
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
Garlic Herb Butter
  • 2 tbsp unsalted butter
  • 3 cloves garlic finely minced
  • 1 tsp fresh rosemary chopped
  • 1 tsp fresh thyme chopped

Equipment

  • Heavy Skillet

Method

  1. Pat the lamb chops dry with paper towels to help them sear well.
  2. Season both sides of the chops with salt and black pepper.
  3. Heat a heavy skillet over medium-high heat and add olive oil.
  4. Place the lamb chops in the pan and cook for 3 to 4 minutes per side.
  5. Lower the heat and add butter, garlic, rosemary, and thyme to the skillet.
  6. Spoon the melted garlic herb butter over the chops as they finish cooking.
  7. Remove the chops when they reach your preferred doneness and let rest for 5 minutes.

Notes

You can prep the garlic and herbs earlier to save time. Try adding a splash of lemon juice or a pinch of chili flakes for extra flavor. Let the lamb rest before slicing to keep it juicy.
