Ingredients
  

Spread Base
  • 1 can white beans cannellini or great northern, rinsed and drained
  • 2 tbsp olive oil
  • 1 tbsp lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1 tsp rosemary chopped
  • 1 tsp thyme chopped
  • 1/4 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
Garnish
  • 2 tbsp red bell pepper finely chopped
  • 1 tsp fresh thyme for garnish

Method
 

  1. Rinse and drain the white beans. Add them to a food processor with olive oil, lemon juice, garlic, rosemary, and thyme. Blend until smooth and creamy.
  2. Season with salt and pepper. Blend again to mix well. Add a little more olive oil if a silkier texture is desired.
  3. Transfer the spread to a shallow serving dish. Top with chopped red bell peppers and fresh thyme for a festive presentation.
  4. Chill in the fridge for at least 30 minutes before serving. Serve with toasted bread, pita chips, or fresh veggies.

  • Customize with roasted garlic for a richer flavor or add cream cheese for extra creaminess.
