Ingredients

  • 5 cups broccoli florets fresh or frozen
  • 1 can cream of mushroom soup about 10.5 ounces
  • 2 cups shredded cheddar cheese divided
  • 1 cup buttery crackers crushed

Method
 

  1. Preheat your oven to 375 degrees F. Lightly grease a medium baking dish.
  2. If using fresh broccoli, steam it for about 4 minutes until just tender. If using frozen broccoli, thaw and drain it well.
  3. Place the broccoli in the baking dish and spread it into an even layer.
  4. Spoon the cream of mushroom soup over the broccoli and stir gently so the broccoli is coated.
  5. Add most of the shredded cheddar cheese and mix lightly. Save a small handful for the top.
  6. Sprinkle the remaining cheese over the casserole, then top with the crushed buttery crackers.
  7. Bake for 20 to 25 minutes until the cheese is melted and bubbly and the topping is golden.

Notes

For extra flavor, stir a pinch of garlic powder into the sauce. You can also add cooked chicken, ham, rice, or pasta to make it more filling. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat until warmed through.
