Ingredients
  

Meatloaf Mixture
  • 1 1/2 pounds ground beef or beef blend
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 egg
  • 1/3 cup almond flour
  • 2 tablespoons tomato paste Whole30 compliant
  • 1 tablespoon coconut aminos
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian seasoning
Topping
  • 1/4 cup Whole30 compliant ketchup for topping

Method
 

  1. Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
  2. In a large bowl, combine the ground beef, finely diced onion, and minced garlic.
  3. Add the egg, almond flour, tomato paste, and coconut aminos.
  4. Sprinkle in salt, black pepper, paprika, and Italian seasoning. Mix gently until just combined.
  5. Press the meatloaf mixture evenly into the prepared loaf pan.
  6. Spread the compliant ketchup over the top of the meatloaf.
  7. Bake uncovered for 50–60 minutes, until fully cooked and the top is lightly caramelized.
  8. Remove from oven and let rest for 10 minutes before slicing.

Notes

Do not overmix the meat to keep it tender. Letting it rest helps maintain its shape when sliced. You can make the mixture ahead of time or freeze leftovers. Serve with roasted vegetables or mashed cauliflower for a full Whole30 meal.
