Ingredients
  

Chili Base
  • 2 chicken breast cut into bite size pieces
  • 2 cups white beans canned, rinsed and drained
  • 3 cups chicken broth
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 can green chilies mild
  • 1 tsp cumin
  • 1 tsp oregano
  • salt to taste
  • black pepper to taste
  • 1 lime juiced

  • fresh cilantro chopped
  • shredded cheese

Method
 

  1. Dice the onion, mince the garlic, cut the chicken breast into bite size pieces, and rinse and drain the white beans.
  2. Heat a large pot over medium heat and add a small splash of oil.
  3. Add the diced onion and cook for 4 to 5 minutes until softened.
  4. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  5. Add the chicken pieces and cook until lightly browned.
  6. Pour in the chicken broth, green chilies, white beans, cumin, oregano, salt, and pepper.
  7. Simmer the chili for 15 to 20 minutes until the chicken is tender and flavors combine.
  8. Stir in the fresh lime juice, taste, and adjust seasoning if needed.
  9. Ladle the chili into bowls and serve with fresh cilantro or shredded cheese if desired.

Notes

This chili is easy to customize. You can use rotisserie chicken for a faster meal, add corn for sweetness, or blend part of the beans to make the chili even creamier.
